In a small bowl, whisk together the flaxseeds and water.

Set aside to thicken while you assemble the rest of the ingredients.

Position a rack in the center of the oven and heat the oven to 350F.

Line a rimmed baking sheet with parchment paper or a silicone baking mat.

Pour the wet ingredients into the dry and stir to combine.

Add the apples, walnuts and cranberries, and mix to incorporate.

Arrange on the prepared baking sheet 2 to 3 inches apart.

Allow the cookies to cool on the pan before transferring to a rack to finish cooling.
